Chef's Restaurant
The Maison des Blés, a luxury hotel with fourteen rooms, is now home to two restaurants: the Brasserie Louis, where guests come for a lobster flan or braised lamb mouse, and this Bouche à Oreille where chef Aymeric Dreux likes to showcase the Essonne region's terroir, while of course indulging in a few hearty escapades. Lobster en tier and poultry gyoza, pollack and paella-style rizzoni risotto, four-spice Genoa bread and fig marmalade for a sequence that costs a little but is worth two solid toques. Superb wine list, with a wide choice by the glass, and discreet, professional service.
