Located just outside Porticcio, this resort may not boast the most glamorous setting in Corsica, but its comfort, combined with its location—just ten minutes from Ajaccio—makes for a delightful stay, especially with the cuisine of the experienced Richard Toix, who, after some wanderings, has found a home here that suits him perfectly. Here, he expresses his curious and well-traveled spirit, creating dishes that blend technical skill with pleasure and possess a distinct personality: blue crab with coral mayo and yogurt siphon, cherry tomatoes with apricot chutney and anchovies, gilthead sea bream with avocado and gambero juice, roasted vanilla fig with red wine—all part of a well-curated menu priced at €115 that has few equals in the resort. The wine cellar showcases a deep knowledge of the island’s terroir.
