Chef Jean-Luc Michac does a superb job, remaining true to his post and to a well-established tradition that has evolved to satisfy all generations. Enjoy a delicious pâté en croûte, as well as sea bream ceviche with mango, seven-hour braised lamb shoulder, or tuna tataki. Everyone agrees on the rum baba or the vacherin ice cream, and we come back on special occasions for the chef’s specialties, such as sole meunière or veal sweetbread crépinettes with morel sauce…
