In this historic 17th-century building with its rustic yet elegant ambiance, Chef Anne-Sophie Godry offers a modern take on classic cuisine featuring local ingredients. In addition to the à la carte menu, there are elegant and pricey set menus priced at €76 and €92 depending on the number of courses, in keeping with the restaurant’s signature style of preparing premium ingredients in a classic manner with a modern twist: scallops in two textures, a roasted version served with Jerusalem artichoke balls, chestnuts, Jerusalem artichoke risotto, and a marinated raw version with lemon, chives, Espelette pepper, and topped with wasabi jelly; sole with herbs (slightly dry), charred pearl onions, mushroom royale, and onion broth with truffle oil; pink-roasted milk-fed lamb shank, coconut beans, thyme-lemon emulsion, garlic cream, and lamb jus with savory, followed by two desserts: the first is crisp and refreshing with apple, kiwi, and clementine, and the second is utterly delicate—a light vanilla mousse hidden beneath a veil of sugar.
