The young chef maintains an excellent two-toque standard at this beautiful Norman restaurant in the heart of the village, striking the right balance between regional traditions and contemporary trends: confit mackerel fillet seared over an open flame with daikon radish, yuzu stracciatella with kefir sauce and herbs, roasted free-range quail on a bed of duck-fat-glazed candied raisins, with chervil, roasted hazelnuts, and poultry jus; warm soufflé with caramelized apples flambéed with Calvados and vanilla ice cream—all part of an excellent €70 menu.
