In the center of Bigorre, Benoît Croizard's table is a sure bet, a classic, elegant setting for refined market cuisine and an almost bourgeois experience. The pretty house offers both contemporary ideas and reinterpretations of classics, such as lobster and shiitake raviole, fish bisque with aïoli and cébette, skrei meunière with shellfish butter, fried onions, quinoa with mussel jus, caramelized apple puff pastry, passion soup and yuzu cream.
