Creating true haute cuisine within the conditions and constraints of the Eiffel Tower to serve guests from around the world at a height of 125 meters—that’s a challenge that hadn’t been met here in ages. Yet it is yet another source of pride for our 2025 Chef of the Year: Frédéric Anton is a master of his craft and adapts his immense culinary expertise alongside his teams. This allows him to offer unforgettable culinary experiences to diners, crafting remarkable dishes into perfectly structured courses: tarragon crab with Granny Smith apple and cider soup, confit red mullet with saffron bouillabaisse, or veal sweetbreads à la Grenoble with rich gravy, followed by raspberries with agastache and fennel, make for a thoroughly enjoyable à la carte lunch menu for €190, while the full menu (available in two formats, 5 or 7 courses) is offered for both lunch and dinner. The other feat is keeping this brilliant operation running with the service of a top-tier establishment—skillful and tactful, with a knack for catering to the global tourist crowd. The wine cellar is an excellent complement, offering everything one could wish for: champagne, great Burgundies, châteaux, and reliable classics.
