Remarkable Restaurant
A sort of sublimation of the Normandy culinary experience, Franck Quinton’s restaurant has now reached a state of completeness: it is at once a 4-star hotel, a vacation destination for lovers of the countryside, and a true tribute to regional cuisine, all steeped in gastronomy and elegance. It is a magnificent house in the woods, offering undeniable luxury and a wide range of amenities, where guests can enjoy top-tier service at the table and cuisine that is as personal as it is masterfully executed. The central theme here is mushrooms, which kick off the meal with the must-try mushroom croque, followed by a beautifully executed trout dish with mushroom garum. As is customary in Normandy, we couldn’t pass up the salt marsh lamb, beautifully prepared in a forest-style blanquette with sea fennel and wild asparagus. The desserts are no exception, featuring a creamy Camembert with pear and Calvados, and a superb vanilla millefeuille with Calvados and dulce de leche. When it comes to the wine cellar, Hugo Lebailly lives up to the family tradition, skillfully showcasing a vast and eclectic selection with passion and expertise.
