Philippe Hardy’s restaurant remains as essential as ever, thanks to its contribution to Normandy’s culinary tradition, emphasizing the importance of local ingredients before anyone else did. Located just two hundred meters from the sea, the restaurant promises a culinary journey through the region, highlighting both the ingredients and the producers. The €96.90 menu offers a wonderful overview, featuring seared lobster, zucchini and arugula rolls, shellfish bisque, the day’s catch, candied pak choi with kombu and shiso gel, local lamb with artichokes and a robust sauce, a rhubarb-based dessert with a variation of fromage blanc and black lemon, and a thyme emulsion. Very pleasant service.
