A quintessential, cheerful Parisian bistro, whose owner is the epitome of the profession on screen. Day in and day out, it’s a thriving business, ideally located near the Stock Exchange, where regulars flock to make early reservations. For here, between the daily specials and the standard menu, there’s always something to savor with these dishes rooted in local tradition: herring with potatoes, veal brains breaded with sorghum from Essonne, frog legs, Acquigny trout with sauce vierge and fennel purée, or Loué chicken with barbecue sauce and beef-fat fries… Veal takes center stage (in addition to the brains, head, kidneys, sweetbreads, and blanquette…), and the glasses fill themselves thanks to a lovely wine list featuring wines from our local vineyards.
