Remarkable Restaurant
For Delphine and Christophe Dufossé, this château in the Bethune countryside is undoubtedly something of a professional dream, but above all, it is now a reality that they must run at full capacity. The former chef of La Citadelle in Metz and his wife have the experience and the assets to succeed: for the past five years, every detail has been carefully considered, and every aspect—from the hotel, fine dining, brasserie, bar, and spa—has been scrutinized and improved to ensure that guests enjoy a complete and satisfying experience. In the restaurant, the chef—a native of Calais—draws on the local terroir he knows so well to highlight seasonal produce and local seafood: line-caught sea bass seared skin-on, variations on zucchini, sea bream with peas, a seafood medley featuring the catch of the day with razor clams, razor clams, and cockles, a robust marinière-style dish, and oyster granita, or even duckling with artichokes à la barigoule in a reduced peppery sauce—every plate is crafted with care and expertise. Multi-course menus tailored to appetites and preferences, with attentive service at every turn, right down to the olive oil-infused chocolate and the final selection of sweet treats. A well-stocked wine cellar featuring fine vintages collected over the years, with a solid selection from all regions.
