In this village, famous for being home to the first royal foundry, this charming 19th-century building houses Laurent Dufour’s fine dining restaurant. With a contemporary and sophisticated style, his cuisine reveals a mastery that remains as impressive as ever, presented in a à la carte menu priced at 53 €. This year, highlights include the fresh, tender poached trout with lime, a green lentil gribiche, curly endive sprouts, and a sprinkle of arugula; roasted haddock fillet in a crust of fresh herbs, served with a royal sauce of leeks and candied eggplant, and an emulsified olive-infused fish stock; a rabbit saddle stuffed with mushrooms, mashed potatoes with parsley butter, carrots with tops, and a tangy rosemary jus, a coffee-flavored frozen vacherin with dark chocolate and candied orange, Sichuan pepper meringue, and Arabica gel. Well-stocked wine cellar featuring Burgundies.
