Just outside Mâcon, this institution—opened more than thirty-five years ago by the Goineau family—continues to welcome families and host business meals, under the management of Mathieu Fauquembergue and Yannick Cornu since 2016. The spacious house remains as inviting as ever, offering both lodging and dining. The €52 set menu lives up to its promise, featuring Arctic char with cauliflower tabbouleh and Paloise sauce; a thick cut of sea bream with zucchini and basil, served with a shellfish sauce; and golden veal sweetbreads with spinach, potatoes, mushrooms, and coffee jus, and a dessert of strawberries, rhubarb, and bergamot. The wine cellar features over five hundred selections.
