His tasting menus showcase the chef's full potential, with savory mignardises, double-cooked foie gras, then turbot on the bone, green asparagus and tangy chanterelle mushrooms, char-grilled Périgord lamb, buckwheat crisp, wild garlic veil and spring vegetables, Ort gin cookie, pollen ganache and floral inspiration.
