In Pézenas, there are many things to say about this small town steeped in history, but its reputation is also built on the Pré Saint-Jean and its chef, Jean-Michel Sempé. A sure bet for many years now, this is a restaurant where you dine with the certainty of finding hearty cuisine, where the cooking and seasoning are executed with perfect precision: pan-seared duck foie gras and veal sweetbreads with a frothy white port sauce and summer truffles… Tandoori-stuffed sea bass medallions with cockles, served with a creamy verbena sauce, zucchini caviar, and chanterelle mushrooms… On the dessert side, a highlight is the apricot, presented in a variety of textures—raw, cooked, as sorbet, and candied in a dessert featuring Dulcey chocolate and lavender… An impressive regional wine cellar, with generous portions.
