The lobster press exists to justify the sign, one of only six worldwide made by Christofle. Then, in this magnificent and prestigious hotel, you simply have to combine the advantages: Sir Gordon Ramsay's signature on the menu, Aquitaine caviar, Jacques Garcia's décor... The menu is intelligently constructed, and the two menus (with more or less expensive ingredients) are balanced in talent and precision by chef Alexandre Koa: beef oyster and caviar, "cagouillade" and basil, pollack and iodized condiment, lamb sorrel soya star anise, citrus baba Izarra agastache in the five-course formula for €195, which gives the full measure of the house style and Grand Hôtel experience. The service is solemn and the cellar full of fantastic vintages, as it should be.
