Philippe Etchebest's brasserie is a fine machine. The cuisine of the media-savvy chef from Bordeaux works remarkably well in this spirit of terroir and modern tradition: raw tuna with green asparagus and fresh garlic cheese with yuzu vinaigrette, roast chicken fillet with glazed green asparagus and wild garlic condiment, tangy strawberries with honey, pomelo supreme and granola in this well-paced formula for €59. In the large dining room, service is lively, the atmosphere invigorating and the wine list well-stocked.
