The cuisine and service are so pampering that we're on the verge of being awarded two "toques", while remaining in the true spirit of a Parisian bistro, in all the nobility of the term. Years of experience in the big houses have given Yann, the big-bearded boss, the perfect balance between customer care and relaxation. Behind the stove, he prepares seasonal produce, always of the highest quality and freshness, in recipes that never lack sauce, crunch, acidity or depth of flavor: scallop velouté with Noilly Prat and crunchy hazelnuts, a sweet comfort in the heart of winter; braised beef cheeks à la bordelaise, melt-in-your-mouth to perfection, accompanied by semi-crunchy, semi-melting carrots and a superb red wine sauce; and to finish, the indispensable chocolate tart with raspberry sorbet, unless you opt for the no less indispensable Grand Marnier soufflé, because it's all so good it'll be hard to share! Of course, you can also be surprised by one of the cuvées of the moment by another Yann, a sommelier without a beard, who is always delighted to share his favorites, mainly from the Loire and Burgundy regions.
