Taken over by Ivan Labrador, this address, which has been a sensation over the last decade, opens a new chapter, with a menu featuring refined Franco-Argentine cuisine. The chef, who has worked with Robuchon, La Tour d'Argent and, most recently, L'Escudella in Paris, offers interesting combinations of regional flavors and nods to his native country: empanada with Cévennes sweet onions cooked to "rescoldo", provolone, a cream of Puy lentils and lentil falafels, veal head and melting vegetables, mustard sabayon and pomegranate chimichurri, poached pear, rosemary caramel, mead granita, propolis chantilly puff pastry, liquid pear candy and pollen.
