Set slightly back from downtown, this house—overgrown with vegetation and hiding a tiny terrace—would almost go unnoticed. The welcome here is refined and warm, and the dining room is intimate. The service, led by the excellent Cyriel Huysentruyt, brings all its energy and passion to the table with discretion and attention to detail. Guido Niño Torres, the most “Ardéchois” of Colombians, offers a fusion cuisine that’s lively, dynamic, and sometimes surprising—but never boring. You simply must try this delicious croquette stuffed with shredded wild boar and a mushroom confit. It’s served with a tomato sauce and confit garlic that adds a lovely zing. One of his signature dishes, Villefort trout, is prepared in countless ways depending on the season and his inspiration. This time, beautiful white asparagus provided a fresh and delicate accompaniment. With an elegant rustic charm, the barbecued goat breast—which is also served as a stew—took on a whole new dimension when paired with seaweed and lemon. As for the finishing touch, sage and pistachios enhanced the superb local strawberries. The lovely wine list—a pleasure to browse through and very well organized—offers a thoughtful selection, including natural wines and even oxidative ones.
