Taking over from Ismail Guerre-Genton and Inès Rodriguez at L’Empreinte, Karl Widmer has set himself a formidable challenge—one that his skill and ambition are rising to with great vigor. The young chef still has a long way to go, but he has already come a long way, now offering three exquisite menus ranging from five to eight courses, priced from €75 to €105. He presents high-quality, contemporary, and meticulously crafted cuisine: a starter of tomato, lovage, and chili pepper; line-caught sea bream with saffron and peas from Pont d’Achelles; duckling with Poivrade artichokes, black garlic, and smoked trout roe; and a crème brûlée made with Madagascar vanilla. The service runs like clockwork.
