The ambitions of this out-of-the-way Biarritz neighborhood are impressive! A shiny, hotel-like contemporary dining room, hefty prices (excluding the lunch menu), and a substantial wine list featuring fine Burgundies and the best of Irouleguy. On the plate, even with the chef present, we're still more interested in the concept than the cuisine, and the €38 lunch menu didn't encourage us to triple the bill by switching to the à la carte menu. Four acras de morue as a starter, somewhere between the Basque Country and the West Indies, sincere, minute, with sucrine, sweet and sour sauce and lime for freshness, then a hake cooked in ballottine, lacking the expected oceanic freshness, on a beautiful buttery shellfish jus in which the melting if slightly bitter white asparagus and peas were cooked. For dessert, no patissier but a juicy, refreshing kiwi salad with crunchy pistachios, mint and a velvety mango passion fruit coulis. The best advice is undoubtedly on plates to share, over a fine bottle of wine, if possible on the indoor terrace sheltered from the Atlantic winds.
