Clémence and Jonathan have completely taken charge, giving the young pastry chef a second wind without revolution, and working on a menu whose spirit has changed very little, simply rejuvenated by small touches: gravlax of pollack with black lemon and citrus fruits, lacquered veal sweetbreads contied with truffle and full-bodied truffle juice, a good hazelnut creamy chocolate guanaja dessert with yuzu caramel coulant. The à la carte menu is close to €100, but there's a very good six-course menu at €80, featuring a number of items from the à la carte menu. Jonathan in the dining room, already an award-winner in the guide, is as brilliant and at ease as ever, presenting an interesting and flawless wine list.
