MOF Sébastien Chambru has found his happy place here amid the vineyards of Pouilly-Fuissé, in a charming stone house. This lovely village home houses a grocery store and two restaurants—the bistro and the fine-dining restaurant—where the chef can give free rein to all his ambitions. The result lives up to his expertise, particularly in this superb €75 menu, featuring poached egg with mushrooms and black bread, dentex with cabbage and radish broth, Jersey beef with leeks, and pomme dauphine, and a dessert of squash, chocolate, and matcha tea. A unique feature of the restaurant is its smoking room for cigar enthusiasts. The wine cellar is remarkable, with over seven hundred selections.
