Remarkable Restaurant
The famous Marée is reborn with Thierry Marx and chef Ricardo Silva, who have been working together since their days at Mandarin. The restaurant’s philosophy has been preserved, just as it was back when the finest fish were brought in from the Atlantic to be prepared in the kitchens. Here, the finest ingredients are given free rein, and Onor treats them with the utmost respect: confit trout with lemon-caviar cauliflower cream, Marans egg with green asparagus, sabayon, and watercress; veal roulade with morels, peas, fava beans, and vin jaune sauce; wild strawberries with blanc-manger, vanilla, and Genoa cake—all part of a beautiful €90 menu. Other options, some entirely vegetarian, are available, priced up to 250 €. A well-curated wine cellar with a serious selection.
