There’s no doubt about Julien Boscus’s qualities: this chef possesses the great talent of mastering his technique and knowing how to select ingredients that appeal to the sophisticated clientele of this part of the 8th arrondissement, close to the bustle of the Élysée. He also demonstrates foresight by offering, for both lunch and dinner, an impressive tasting menu that provides a wonderful introduction to the restaurant: admittedly, he could take it a step further by deepening the flavors and pairings even more and streamlining the menu with a few fewer ingredients, but the result is thoroughly convincing: Mediterranean amberjack with a bold jalapeño sauce, Breton sea bass with a Mediterranean sauce, beurre blanc, and verbena, gremolata, spring onions in tempura—the fish is good and cooked to perfection, though slightly overshadowed by the seasoning—, Mesquer pigeon breast, Cantabrian anchovies, mushrooms stuffed with chicken thighs and giblets à la caillette, a lovely salmis sauce spiced with rancio and a superfluous cucumber, a good strawberry baba, and the curious sweet guacamole with a coconut texture and strawberry flavor.
