The result is quite delightful, with bases made from mushroom cream or Isigny cream, for example, topped—depending on your preference—with aged Mimolette, dry-cured Savoy ham, Fourme d’Ambert, Sainte-Maure ash-coated goat cheese, spinach, smoked Montbéliard sausage, or even Béarn sausage with Espelette pepper!
