Renaldo Calavetta is the king of soufflé, which he adds to his menus in a variety of sweet and savory sauces, for a gourmet treat that never fails. There's the petit soufflé with scallops and lobster bisque coulis, mesclun salad with basil; the cep soufflé with chestnut flour, cep mushroom cream, duck breast and ginger confit, cep fricassee and roasted praline hazelnuts; the classic Grand Marnier soufflé; or the caramel soufflé with Guérande fleur de sel and coulis.
