Vézelay remains a beacon for pilgrims from around the world, and the Lord guides your steps—as well as those of travelers who are sometimes more food-loving than devout. Eric Balan is a seasoned chef of great skill whom we have been following for a long time. Plates presented with precision, a solid traditional foundation, and harmonious flavors that please everyone: semi-cured foie gras with red wine, lemongrass, and ginger jelly, soumaintrain millefeuille, variations on quail with truffle-infused Albuféra sauce, and chocolate rocher with hazelnut and fleur de sel. Vegetarian options are available, along with an extensive selection of regional wines.
