Remarkable Restaurant
It’s always a great pleasure to visit Matthieu de Lauzun, who is firmly established at the Prieuré de Saint-Jean-de-Bébian and determined to carry on the wonderful legacy he began with the estate. The pairing is beautiful and harmonious; the chef works diligently to highlight authentic, unpretentious ingredients within this ancient building, which has been renovated and decorated with great elegance—again, without any frills. From his signature dish—a reimagined pastilla—to flame-grilled mackerel and mackerel tartare… Or the pigeon with peanut emulsion and gastrique, and his creative takes on carrots and mushrooms… Right through to dessert, where blackcurrant and pistachio pair perfectly… The dishes are straightforward and indulgent, complemented by exquisite food-and-wine pairings. The service is always professional and friendly.
