This is one of Cesson-Sévigné's finest references, located right on the banks of the Vilaine River. Chef Grégory Hamon's good intuitions are reflected in his convincing bistronomy: fried organic soft-boiled egg, creamy Jerusalem artichoke truffle, buckwheat, green leek oil, Xeres vinegar with porcini mushrooms, caramelized hazelnuts, cod and Nice lemon confit, green tea herb broth, seasonal vegetables, spinach shoots, fresh herbs, wheat pearls and olive oil, a quasi of veal in a black garlic crust, pepper caviar, sweet potato gnocchi with old mimolette, green asparagus and wild garlic. Good service.
