After a brief stay in Anjou, Camille Ntonga and Tom Blain found a welcoming haven in Tom’s native Normandy, in the lush Pays d’Auge region, in a charming Norman house in the village. The young chef quickly forged fruitful ties with local producers to create a tempting seasonal menu. Based on the concept of bowls filled with colorful and appetizing ingredients, he combines freshly picked, just-arrived, or market-sourced ingredients with a touch of imagination: melon gazpacho, sheep’s milk cheese, hazelnut crumble (the praline might be a bit much, making it feel like a dessert served as an appetizer), fish rillettes (conger eel recently), green beans, coral lentil hummus with pesto, and a dessert of caramelized tomato with buckwheat and tomato-buckwheat crumble. A few additional preserves from the grocery store, a personal wine cellar inspired by the Loire region, and local cider to accompany this delightful moment, hosted by Camille, who is radiant whether in the dining room or on the terrace in front of the house.
