Alexandre Bourdas’s talent remains as strong as ever, and he proves it to all his loyal patrons—especially at dinner, when the menu is enriched with his memories of the Aveyron region and the flavors he’s discovered on his travels. There are, of course, the delightful appetizers: the Ravigote-style sausage, the famous “pascade” with bacon and walnuts, the Japanese-inspired dishes dear to his heart (sushi platter, okonomiyaki…), and then the daily specials—varied, appetizing, and flavorful: black rice with langoustines, garlic, cuttlefish, mussels, spring onions, and lemon; roasted cockerel with candied lemon and ras el hanout; and even the tripe dish from his childhood. The prices are very reasonable for such a delightful and original experience, and the wine cellar reflects that of a true connoisseur. The €30 lunch menu is perfect for an introduction to the restaurant.
