Having worked at Le Meurice and Les Crayères, among other places, Allan Castellote brings experience from top-tier establishments, which he now applies in a wine cellar-style dining setting. The concept is no less refined, but wine takes center stage, creating a dual and successful dining experience. The menu takes you on a culinary journey, featuring langoustine ravioli with bisque, lemon balm, and combawa; squid à l’armoricaine; basmati rice with vegetables; a vol-au-vent filled with veal sweetbreads; a fricassee of mushrooms and pearl onions with truffle sauce; and even a Black Forest cake.
