One of the most interesting culinary experiments in the prefecture, created by Antoine Triquet. His dishes offer an engaging “bistronomic” cuisine that evolves according to his inspiration and the seasons. Highlights include his €75 evening menu, featuring five original courses: confit beefsteak tomatoes, glazed tomato salad, open mussels with zucchini and smoked paprika, shallots with oysters and fresh gurnard, a bowl of cereal, French toast with Harlequin candy, a take on rice pudding, and even popcorn, dry martini, and rhubarb.
