A Caen institution like few others, known for its elegance and high-quality ingredients, ideal for celebrating a special occasion or hosting a business dinner. In this cozy atmosphere, Stéphane Carbone brings his vision of fine cuisine to life: spiced pressed chicken with foie gras, orange marmalade and saffron-infused corn hummus, Poivrade artichokes, seared sea bream fillet, eggplant caviar, and tomatoes stuffed with spinach and pine nuts, carrot pesto, chorizo emulsion and lace-patterned tuile, or even a chocolate espuma, fresh cherries, chocolate cake with Kampot pepper, and red berry sorbet.
