Thomas Collomb, winner of the Gault&Millau d’Or award, continues to delight us at his warm and welcoming table d’hôte in Gevrey, where guests come to share some wonderful regional dishes. Together with his wife Lucie, they’ve turned this establishment into one of the most charming in the area, with its rustic yet very chic style—serving as a hotel, restaurant, bistro, wine bar, and wine cellar all in one. It’s an ode to the pleasures of the table, showcased by a beautiful €110 menu featuring combinations such as peas, wild garlic, and smoked milk; a plate of white asparagus and langoustine; trout with sorrel and lettuce; guinea fowl with cauliflower and cilantro; and a strawberry and verbena dessert.
