It is a constant delight and a reflection of Alsace at the table—in the hard work and discretion that bring pleasure to everyone involved. Pride for those who create it, gratitude for those who receive it. At Thierry Schwartz’s, in this charming setting of wood and stone, where every detail is carefully considered, the ritual is followed to the millimeter without the guests even realizing it. Admittedly, one might argue that precision and mastery are easier to achieve with a fixed, secret menu—repeated throughout the service for the entire dining room—than when the kitchen team must create dishes from an à la carte menu that varies for each guest, but the chef is, above all, a consummate professional, adept at handling any situation, varying his two main menus—priced at €138 and €185—depending on market availability and the season, with five or nine courses that are original, aesthetically pleasing in their presentation, and delicious. An extensive wine cellar, with 1,750 selections, offering a knowledgeable selection from Alsace and the surrounding regions in the broadest sense.
