Son Vaisseau is one of those places you recommend to friends from out of town who ask which restaurant they should visit to really stay in the loop about what’s happening in the capital. Adrien Cachot is certainly what you might call a prominent chef, and a visit to his restaurant is never just a casual affair. Hidden menus with cryptic names (“tartlet of tears,” “veal brain karaage with magic sauce,” “chocology”...), and obvious talent—all the ingredients are in place for a journey aboard this spaceship, in an intimate atmosphere with dark tones and an open kitchen. Intriguing ingredients and flavors, a distinct originality, and signature dishes, such as the “mochi Cachot e pepe” with pecorino and black pepper, or this beef heart dish, marinated in roasted pepper, served with braised sucrine lettuce and a matelote sauce, and flambéed oysters with miso seasoning. The food and wine pairings are interesting and equally inventive.
