A distinctive style, a signature—that of William Ledeuil, who has maintained his high standards for twenty years without ever compromising or straying too far from his style. Whether it’s juices, broths, or sauces, he prepares everything with mastery and personality, adding to each plate an idea—a bridge to Asia, to which he is deeply attached—and showcasing his expertise in flavors and condiments: in the haddock marinated in shiso vinaigrette with green mango and fennel; in the morels in a green asparagus broth with green curry and wild garlic; or in the Ferrier-style pigeon with sage, violet mustard, and beet jus, served with an olive vinaigrette. The restaurant has also long chosen to keep its prices well below those of luxury hotels, offering two well-curated set menus at €105 and €125. We finish with rhubarb sorbet with brocciu, shiso, and hibiscus; the service is delicately attentive, and the wine cellar features only top-tier selections, ranging from up-and-coming producers to established estates.
