Cold as stone in Champagne winters, the first nose is rather austere. But very quickly, the powerful aroma brings warmth and harmony, with aromas of sandalwood, pipe tobacco and sweet almond. As the totally refined bubbles burst delicately on the palate, we discover a silky, cheerful but restrained substance, absolutely seductive and quite unforgettable. It's all there: the fruit, the slight patina of time, the restrained freshness before a finish of absolute persistence, but aristocratically, without imposing itself. A wine of absolute youth.

Bollinger is a house founded in 1829 in the village of Aÿ-Champagne. Six generations have patiently built an impressive legacy while preserving its independence. The Bollinger style is inimitable and recognized as such by discerning champagne connoisseurs. As it approaches its bicentennial, the house continues to grow and modernize: a “cathedral”-style cellar, with a capacity of 5,000 barrels, has just been inaugurated, while a large wine tourism complex is under construction. It will notably include a luxury hotel in the family home, scheduled to open by 2029. Emilien Boutillat recently became the new cellar master.
