Charming, expressive nose for this vintage cuvée, which has been cellared for 7 years. The palate is very ripe and aromatic, with toasty, spicy notes. A well-balanced, gourmet champagne to be enjoyed as an aperitif with a tartar of scallops lacquered with olive oil and slices of raw porcini mushrooms.

Bourgeois Diaz

Jérôme Bourgeois-Diaz has presided over the estate's destiny since 2000. From a family that has been making champagne for four generations, he oversees almost 7 ha, including 3.5 ha of Pinot Meunier, 2.5 ha of Pinot Noir and 1 ha of Chardonnay. The plots, on predominantly clay-limestone soil, have an average age of 35 years and have been biodynamically farmed since 2009. Every precaution is taken to maximize the quality of the grapes, and the domaine's motto fits well with the wines we taste here: "Wine is not chemistry, but alchemy". Superb, they are vinified in stainless steel vats, oak barrels or clay and concrete vats, depending on the profile of each vintage.
