This cuvée, from a parcel of Chardonnay from the Bouzy terroir, is vinified with 2 g/l added sugar. The nose is still somewhat restrained. However, on the palate, the wine shows a delicate complexity, with notes of white fruit (peach, pear) and a superb length combining acidity, vigour and freshness. It could match well with fish in foil.

Since 2008, Brigitte Beaufort has been meticulously crafting her 14 parcels spread over 4 hectares, all certified Grand Cru (Bouzy, Ambonnay and Tours-sur-Marne). The proportion of blends varies according to the harvest, to produce dense, ripe and precise microcuvées, all from the same vintage. A new step was taken in 2022: the bottles are branded with his own name, numbered, with the composition of the blend, date of disgorgement and dosage, and the initials of his children's first names (Anne-Louise and Pierre-Herbert) are now included in the name of each of his cuvées. A red Bouzy completes the range of champagnes.
