The environment is more root-like, tinged with citrus fruits including grapefruit. The palate is full and restrained. The bubbles are beginning to take on fullness and, for the moment, finesse is the order of the day.

Deep in the Montagne de Reims, in Chigny-les-Roses, the thirteenth generation of the Cattier family cultivates 33 hectares of Premier Cru vineyards. But Cattier also owns a gem, the Clos du Moulin, which comprises 2.2 hectares planted equally with Chardonnay and Pinot Noir. The wine produced there is a blend of three vintages. Production for the cuvées is supplemented by additional supplies. Alexandre Cattier serves as CEO and cellar master, assisted by his cousins Agathe, deputy general manager, and Marie, brand ambassador. They are all committed to ensuring the continued success of a brand known for its refined and fresh champagnes.
