With its light lemon color and golden highlights, this 2012 vintage expresses lemon and white fruit on the nose, with light herbaceous and pastry notes of brioche. The mousse is chalky with fine bubbles. Mineral and fresh, the palate, dominated by yellow lemon (zest and juice), is iodized and saline. Elegant, crisp and full of freshness, this wine, with its long, intense finish, is perfect as an aperitif and with seafood and shellfish dishes.

In the 1950s, the Neuville-sur-Seine and Buxeuil cooperative winery was looking for a name for its champagne brand and drew inspiration from the Clarembaud dynasty, lords of Chappes (a town in the Aube department) and owners of vineyards. Neuville-sur-Seine is located at the southernmost tip of the Champagne appellation; the vineyard enjoys ideal conditions for champagne production. The winery handles every step of the process, from the grape harvest to shipping, and produces its own AOC Champagne red wine, which is essential for making rosés.
