A wine in a class of its own, both dessert and discovery. Its nose is woody, with notes of cocoa, candied lemon, pear fruit paste, vanilla and caramel. It has fine bubbles and a taut, silky mouthfeel, with licorice, honey and red fruits. The 60g of sugar melt into the balance. The finish is salivating, with aromas of coffee, garrigue and lemon candy. An iron hand in a velvet glove, to be served with curried lamb.

A couple of young winemakers, Faustine and Marc have revived the family's 7-hectare monocru estate in the Champagne traditions of yesteryear. On the estate, which is undergoing organic conversion, a parcel-by-parcel selection is carried out on 1 ha of sand and limestone terroirs. Respect for nature guides the entire process from vine to bottle: the vines are cultivated according to biodynamic principles, and vinification is guided by the lunar calendar. Vinified in numerous small containers, over 70% of which are oak barrels and terracotta amphorae, 30% of which are solera (perpetual reserve wines), the champagnes are lively, elegant and made for gastronomy.
