Beautiful deep color with orange highlights for this saignée from the 2014 vintage with a large pinot noir dominance. The nose is both floral and spicy on opening, followed by elegant red fruits. On the palate, champagne becomes wine, offering a real alternative to the pinots of northern Burgundy. Open with red meats or aged langres.

The family estate run by Laurence and Cyrille Chenevotot is located in the Marne Valley. All cuvées from the 4 ha of vines are vintages from the Boursault terroir alone, vinified and aged for around ten months in barrel. The powerful style of these champagnes makes them the perfect companions for both fish and meat dishes. The estate has been certified organic since 2023. It adheres to the Vignerons Indépendants charter, vinifying only its own grapes. We have a soft spot for its "Cœur de Meunier" cuvée, which is unfailingly consistent.
