Behind its superb old gold color, this champagne opens with a nose of dried cepe, beeswax, chestnut honey and toast, with preserved freshness and a hint of fruit still clearly perceptible. It's a journey. The sensations continue on the palate, with flavors of roasted coffee, mocha and superb mineral length. The perfect match: sweetbreads with morel mushrooms.

This company, founded in 1955, is based in Bouzy, a Grand Cru classified area and kingdom of Pinot Noir. This terroir has been enhanced by the soil tillage (buttage, decavaillonnage...) carried out by this harvester-manipulator. The vineyard has been deeply ploughed for generations, and the estate is certified HVE (high environmental value). He is happy to ignore trends and fashions to produce wines that are always remarkable, and that age wonderfully.
