Superb. This non-dosed champagne reveals an open nose with aromas of fresh farmhouse bread, candied lemon, rhubarb, fresh mint and white peach. On the palate, the wine is full-bodied and crystalline, with texture and tension. Subtle bubbles. Long on the palate and salivating with its finish of toasted cereals, lemon and peach, this wine will go well with a supreme of sea bream, zucchini flowers and fromage frais.

Piollot Père et Fils

This 19th-century Aube family estate is located in Polisot, on the Côte des Bar. Roland Piollot took over the estate in 1986 and began working the soil. After obtaining organic farming certification in 2014, the 8.5 ha of vines were recently certified biodynamic. Proud of his heritage - half the vines are over 50 years old - the winemaker produces a majority of pinot noir, but also arbane and pinot blanc. In addition to his classic cuvées de réserve and rosés, the domaine offers single-vineyard champagnes with assertive character. His daughter Jeanne, the sixth generation, is in charge of the estate's communications.
