With its beautiful garnet-red color, this pure pinot noir... "pinotes", as we say in Alsace, with intense aromas of red fruits (raspberry, cherry), peony and spices (white pepper, licorice). This is clearly a red wine with marked aromatic power. On the palate, the tannins add roundness to a greedy, fruity substance, and help to give fullness to what can be considered a light red (only 11.5°). Fine, persistent bubbles make this a gourmet rosé to pair with fine red meat, or even venison chops, to be served on any occasion.

In 1999, Fabrice Pouillon took over the estate created by his grandfather in 1947. He reorganized the 7.7 ha of vines, replanting with selections massales and identifying 42 parcels cultivated according to soil type. Organic farming is now in place, with horse-drawn ploughing, on-farm composting, respect for natural rhythms and limited yields. These techniques are reinforced by regenerative agriculture (maintaining plant cover). In the cellar, the house uses indigenous yeasts for fermentation, which are kept in an external laboratory. The Fabrice Pouillon Method, based on indigenous yeasts, barrels and small vats, is applied to all our wines.
